Oats, Carrots and Raisin Porridge
When my little one has an off day at school, I make some special food for his breakfast. Something that just the 2 of us enjoy. There are quite few dishes that my husband does not like and finds them either too bland or too sweet. This morning I was in mood to make the oats porridge again. For the sake of my kid’s palette I add some sugar to his bowl, but otherwise it tastes good with a pinch of salt too. I make this version with different kind of vegetables and nuts. This time I used carrots and raisins which were the magical ingredients for the monthly event.
If you love oats or porridge you will definitely enjoy this one. If you need bunch of energy to deal with for your early morning then this is the potion for the job.
Ingredients (for 2 people)
2 tbsp Rolled Oats (Quaker)- Use anything that you are comfortable cooking
2 cups Milk
1 cup Grated Carrot
1 tbsp raisin (soaked and pureed) Leave few for garnish
1 tspn clarified butter or plain butter
2 tspn Sugar (optional)
Method
1)In a sauce pan, heat some butter.
2) Add the grated carrot and sauté it for 4-5 min on high flame. The carrot should be well cooked
3) Add half the milk and let it cook. Stir till the milk is absorbed by the carrots completely (about 15 min)
4) Now add the raisin puree to the remaining milk and stir well.
5) Add this to carrot mixture in the sauce pan.
6) Cook for another 2-3 min.
7) Add sugar if you like and stir.
Serve hot
You can play with different options of fruits and vegetables here. Some combinations I have tried and liked are,
Spinach and crushed almonds (Savory) Replace sugar with salt and pepper
Broccoli and almonds
Apple and cashew powder
