Herbed Bread- Indian style
I like the indian style sandwich the most when it comes to stuffing things between the bread. Cheese chilly, vegetable tikka, junglee vegetable, paneer chatpata, corn mayo are some of the stuffing options available at the office cafetaria and then there is the bombay activity toast & plain vegetable sandwich.
When I came across the recipe for a herbed bread, I lapped it up. I replaced all the alien sounding herbs with the more familiar ones. It is such an easy job after that. Use the bread with all the flavors in it and stuff it with just cucumber and tomato slices...makes a yummy sandwich

Ingredients
2 1/2 cups of APF
1 1/2 cups of warm milk
1 egg/ 2 tbsp corn flour
1 tspn caster sugar
1 tspn salt
1 tbsp Oil
2 tspn chopped coriander
2 tspn chat masala
2 tspn chopped fresh mint
1 tspn cumin seeds
2 tspn dry active yeast
Method
1) Mix the flour with corn starch(if not using egg), salt,sugar,chat masala,coriander,mint and mix well using a fork.
2)In another bowl, mix the milk with oil (and egg of using) and beat well.
3) Add the yeast to the flour or milk (depending on your yeast pack instructions)
4)Make a well in the flour bowl and add little milk at a time and start kneading.
5)Make a soft pliable dough.
6)Cover with a cling film and let it sit in a warm place for 30 min. I kept it in the oven (switched off for 20 min)
7)Preheat the oven at 200c for 5-10min
8)Place the dough in the greased loaf tin. Let it rise to desired height for another 10 min
9)Brush the top with some milk and sprinkle cumin seeds
10)Bake for 20-25 min or until the bread sounds hollow.
Chop, toast it and enjoy with flavored butter* watch space
