Dal Baati

Recent experience of eating dal baati at a restaurant was not very good. The dal was flavorless and baati was soggy loaded with ghee. Normally one would have thought, I am not eating it again for a while.
But me being umm Me, I decided to revive the real good taste by making it immediately at home. Wasting no time. I made them in oven which made them guilt free.
Over to recipe....and yes, it tastes fabulous

Ingredients (for 4 servings)
For Bati :
2 cups whole wheat flour, sieved 
1 tbsp ghee (At room temp)
2 tbsps curd 
Salt to taste
a pinch of baking soda(optional)
For Dal
1/2 cup Split Pigeon Peas (tuvar dal)
1/2 cup Split Bengal Gram(Chana dal)
1/4 cup Split Green lentils (Moong dal)
2 inch ginger grated
1 tspn garam masala
1/2 tspn turmeric powder
1 tspn red chilli powder
1/2 tspn green chillies crushed (optional)
1/2 tspn coriander-cumin powder
salt to taste
coriander for garnishing
2 tspn ghee
a pinch of nigella seeds(kalonji)- You can use cumin seeds or mustard seeds
a pinch of asafoetida
Method
1) For baati, mix all the ingredients to make a stiff dough. Use little water if required. Cover and set aside for 15 min.
2) Preheat oven for 5 min at 200c.
3) Place the baatis on a non stick of lined baking sheet. Bake for 20 min. Turn them around after 10-12 min for even color.
4) Soak all the 3 washed lentils for 10-15 min.
5) Pressure cook the 3 dals along with turmeric, salt.
6)When cooked, lightly crush the dal using the back of the spoon. Add more water as per the consistency you like.
7)Cook the dal in a large saucepan. 
8) Add the garam masala, red chilli powder, coriander-cumin powder, ginger, green chillies 
9) Let it simmer until flavors are released.
10) In a separate tempering pan, add some ghee (quantity can be as per your choice). Add nigella seeds and asafoetida.
11) Pour it on the dal. Add coriander to the dal. 

Serve the dal. Break open the baati and drop it in the dal bowls. Add more ghee if you like.

Thanks for the recipe... When I was kid my neighbour used to make this for us... I like it but never dared to try it in a restaurant as I didn't wanna spoil a childhood memory.
