Papaya Orange preserve or papaya sauce or papaya butter
When I saw the papaya relish recipe on Priya's space, I immediately picked up my long pending jam/ preserve project. I had papaya that had ripened for a week losing its taste and shape.
Also, papaya always interested me because of its natural ability to gel , remember the papaya pudding.
My preserve or butter was ready in 40 min flat.
Ingredients
1 large papaya skinned, deseeded, deveined and roughly chopped
1 orange squeezed with pulp and juice deseeded and deskinned
1 cup sugar
1 tspn paprika/ red chilli powder (deghi mirch)
1/2 tspn cinnamon powder
a pinch of salt
Method
1) Put all ingredients in a deep sauce pan. Heat on low flame
2) When the papaya becomes soft, mash it using potato/pav bhaji masher.
3) Continue heating it until the pulp starts leaving the sides of the pan.
4) Cool it and transfer to a sterilzied jar.
Use as a jam on breads, dips with finger food (cucumber/carrots), pan cakes, or may be as an ingredients for your baking goods.
