Matar Gudila
Continuing the bihar special theme, I cooked another simple and easy to make recipe which had a distinctly different taste.
Gudila is probably gravy that is made with peas, corn, any other pulses. The tempering is what changes the flavor.
Dont mistake it to be another potato peas gravy as this one will surprise you with the flavors.
Ingredients
1 cup green peas
1 cup chopped potato (skinned)
1 onion finely chopped
1 tspn ginger garlic paste
1 tspn red chilli powder
1 tspn turmeric powder
1/2 tspn garam masala
1 tspn roasted cumin seeds powder
2 tbsp Oil to cook
1 tbsp Clarified butter
4 cloves
2-3 green cardamom
salt to taste
Method
1) In a pan, heat some oil, add the onions and saute them. Add the ginger garlic paste and cook till they are well cooked and blended.
2)Add the peas, potatoes and saute again.
3)Add the red chilli powder, turmeric, garam masala, cumin seeds powder and salt and mix well.
4)Cover and cook with a little water on the plate (or heat water separately). Add water spoon by spoon to aide cooking. About 15 min.
5) In a small pan, heat the clarified butter and add cloves and cardamom saute for a few seconds and then add to the gravy pot.
6) Serve with puris or roti
