Chocolate almond truffle

The best way to give your house the xmassy feel is to make these truffles at home. These are so easy to make that you will want to make multiple experiments with them immediately. The catch is ofcourse the technique. One small mistake and you will end up losing all your chocolate.
I had a morde’s dark chocolate bar at home. I do not add any sugar to my truffles as I like the slightly bitter taste in it. You can ofcourse make variations.
Adding almonds or any nutty flavored ingredient can make a lot of difference as it cuts the bittersweet taste.
Tips: Use all ingredients strictly at room temperature. Avoid even a drop of water while working on truffles.


Ingredients (for about 2 5 pieces)
200 gms dark chocolate
100 gms almonds ground to powder (With skin)
½ cup full fat cream
25 small almonds toasted (for 3-4 min in mw)
Method
1) Chop the chocolate pieces and take them in a microwave safe glass bowl. In another pan which can hold the glass bowl easily on top, heat some water.
2) When the water starts to boil, place the glass bowl on top . After few minutes using a whisk or fork mix the chocolate as it starts melting. Keep aside(Do not let the chocolate melt fully). Just a little runny.
3) Scald the cream in another pan, do not let it boil or bubble.
4) Pour this cream on the chocolate mixture and let it stand for a 5 min.
5) Now add the almond powder to this chocolate mixture and mix gently.
6) Pop this in fridge and let it sit for 20 min. The mixture should be mousse like when you take it out.
7) Using a spoon or scoop, make small balls of the mixture , press one almond in each of the balls and seal it. Use some cocoa powder on your palms to avoid sticking.
Wrap in silver or golden foils or serve as it is. 
This is a great gift for festive season.

You can also make variations to this
 - by using milk chocolate, white chocolate.
- Changing the nuts
- Dipping it in melted chocolate coatings
- Covering them in cocoa powder
- Covering them in dessicated coconut
