Baked Sweet potato with marshmallow cream

Ratala (sweet potato) are often eaten during fasting in various forms. The easiest way to consume it is by boiling, peeling and mixing with sugar , milk. The other way of eating the sweet potato is called as ratalyacha fodi (sweet potato pieces). This is easy and very tasty. Peel and cut the slices and then shallow fry them in some ghee until they are cooked. Add sugar and cook until the sugar is dissolved. 
I modified this basic dish to make it a little exotic.




Ingredients (for 2-3 servings)
2 medium sized sweet potatoes
1 tbsp sugar
1 tspn clarified butter/ ghee
1 tbsp mini marshmallows 
1/2 tbsp milk cream
Method
1)Wash and peel the sweet potatoes. Cut them in small discs.
2)In baking dish, add the sweet potatoes, ghee and sugar and mix well.Spread them evenly
3)In preheated oven, bake the sweet potatoes for 10 -12 min until the sugar forms a crisp layer and the potatoes are soft and cooked.
4)Add the mini marshmallows and cream on the top and pop it back for 4-5 min. 
5)The marshmallows though not melted will be cooked .
Mix the topping just before serving
