Butter cookies

Ever since I ate the hot mini cookies on our way back home during a weekend getaway, I was itching to make them at home. I always wondered the soft buttery spikes melting in my mouth with a hot cup of coffee.
My dream was for real when I finally made them last week. I came across a lot of recipes with a warning that said you should prepared to see the beauties lose it's shape when popped in the oven. Nevertheless I made an attempt and what a wonderful treat it was.


Ingredients
100 gms butter
100 gms Icing sugar
175 gms All purpose flour (for chocolate use 150 gm APF + 25 gm Cocoa)
1/2 tspn baking powder
1 tspn vanilla essence
Method
1) In a large bowl, cream the butter and icing sugar.Add the vanilla essence and pulse again
2) In a separate bowl, mix the flour and baking powder. Add a pinch of salt in case you are using unsalted butter.
3) Fold the flour in the butter icing carefully. The texture should be of a thick icing.
4) Preheat the oven at 180c.
5) Fill the mixture in an icing bag and drop small cookies on a lined baking sheet.
6) Bake for 10-12 min. First batch may take upto 15 min. This makes  about 30 cookies.

umm.. yummy butter cookies.. I have a recipe too that I follow. Don't loose the shape either.. will post it sometime soon.
