Guava & Carrot Salad

Guava for me is the Indian Avocado. Guava comes in various varieties in India. The pink core guava is the most popular one. Last year during our trip to Aurangabad (the land of guavas besides all the historic importance) we picked guavas by tonnes. On the streets they often color the core to resemble the once available red core guava. But they are honest in confessing that they applied colors. The taste is of course no compromise. 


Well, just like avocado the guava is a great source all good things for skin. The way we eat it in India, cutting and applying salt and red chilly powder is just about enough for us to enjoy the advantages.
But when you have guava in loads at home, the next best and quick thing to do with it is to make a quick salad. Guava is soft from within and crunchy on the outside. So you can easily match it with different variety of veggies like onions, tomatoes, carrots, radish. 
I have restrained from adding onions to keep the pungent taste a little lower. I have used coriander to fill in the green gap, the leaves are used in abundance and also avoided any stems. Do not chop the leaves to retain the crunch in each bite.



Ingredients
1 cup guava cored and chopped in thin slices lengthwise
1 cup carrots julienne
1/2 cup coriander leaves (do not chop or include the stems) 
1 tspn lime juice
1 tspn red chilly powder
salt to taste
Method
1) In a bowl mix all the ingredients except the lime juice and toss well.
2) Add the lime juice just before serving.
