Gazpacho Soup

Gazpacho is famous spanish soup. It is usually served cold and does not involve any cooking. This makes it easy to make. It may take some time to build the taste for consuming a cold soup but if it is scorching October heat like today it will be welcomed by all.



Ingredients (For 4 people)
500 gm ripe tomatoes 
1 onion (optional- I did not add as the one's I have currently are very pungent)
1 medium capsicum (deseeded)
1 cucumber
1 carrot
3-4 cloves of garlic
5-6 fresh basil leaves (Use dried herbs in case you dont have this)
1 tspn paprika/ cayenne pepper/ red chilli powder
salt to taste


Method
1) Mix all ingredients in a blender and make a smooth puree
2) Strain the puree to get a fine liquid. Use  regualr tea strainer.
3) Chill it in refrigerator for 3-4 hours and serve.


I did not discard the pulp that I had strained. I put it in a sauce pan with a spoonful of olive oil and cooked it till it became sauce like. Applied it on toasted brown bread and enjoyed with my glass of Gazpacho.

Cold soup sounds inviting on a hot day. But its cold and windy in this part of the world and I am shivering shivering. What I need is something warm and creamy..hehe.
