Pizza Sauces (All varieties)

I have never bought the ready pizza sauces as my sauce recipe has never failed me with the results. This recipe can be varied as per the requirement of your pizza recipe. The popular pizza sauce recipes (mostly Italian) are
Ingredients (Mine yields for 4 regular size pizzas- make them as much you like and stock it for a pasta a couple of days later)


    1)   Simple And  Indianised Sauce
a.      2 Onions
b.     4 Tomato finely chopped (pureed with skin would do)
c.     5-6 garlic cloves
d.     1 tspn Red chilly powder
e.      Mixed Italian Herbs
f.      Oil to cook
g.     Salt to taste
     2)     Neapolitan Pizza Sauce
a.     2 tomato pureed,
b.     2 tomatoes chopped
c.     3-4 garlic cloves
d.     Basil
e.      Oregano
f.      Pepper
g.     Fennel seeds/ leaves
h.     Oil to cook
i.       Salt to taste
     3)     Sicilian
a.     2 Onions
b.     4 Tomato finely chopped (pureed with skin would do)
c.     5-6 garlic cloves
d.     1 tspn Red chilly powder
e.     Basil
f.     Oregano
g.     Oil to cook
h.      Salt to taste
i.      Parsley
j.       Fennel seeds powder/ leaves crushed
     4)     Hot n spicy
a.     2 Onions
b.     4 Tomato finely chopped (pureed with skin would do)
c.     5-6 garlic cloves
d.    2 tspn Red chilly powder
e.     Basil
f.     Oregano
g.    Oil to cook
h.      Salt to taste
     5)     Mild cheesy
a.     2 Onions
b.     4 Tomato finely chopped (pureed with skin would do)
c.     5-6 garlic cloves
d.    Basil
e.     Oregano
f.     Oil to cook
g.     Salt to taste
h.     Romano Cheese (Use cheddar if Romano is not available. I used Britannia Cheeza which is perfect)
    6)     Chicago deep dish special – 
                   a. chopped tomato
              b. basil
                   c. oregano
                  d.  salt
                  e. parmesan
                  f. virgin oil 
                  g. salt
      Method
1) In a deep sauce pan, heat some oil. Add the onions and chopped garlics (if included in the ingredients) and sauté until the onions are cooked.
2) Add the chopped tomatoes (if included in the ingredients) and sauté until they are soft and cooked.
3) Add the tomato puree(if included in the ingredients) to the pan and stir in.
4) Add the salt , herbs and chilli(if included in the ingredients). Add a little water at this stage if the mixture turns to dry which happens when we add salt. You still want to maintain the sauce consistency.
5) Add the cheese(if included in the ingredients) , grate it or chop it, it will melt away anyway.
6) Let it simmer for 1 min. The sauce is ready to use.

That is a nice variety of pizza sauces and all in one place.
Nice, fresh made sauce tastes so much better than store bought versions.

wow what a fabulous post with so much variety. I never before saw fennel seed used in sauce but great flavor profile
