Fusili Pasta in white cheesy sauce

It was raining heavily outside and again dear hubby wanted to eat something cosy. He okayed pasta for dinner. I had some fusili lying around for some time. Luckily son also likes some pieces of pasta on and off.
Instead of usual white sauce I added some cheese to it.

Ingredients
2 cups of Fusili pasta (cooked as per instructions)
1 ½ cup of milk (Include cream/Malai)
1 tbsp of All purpose flour
1 cube of cheddar cheese
1 tbsp parmesan cheeseSalt to taste
Italian mix herbs (as per taste)
2 tspn black pepper crushed
1 tbsp Olive oil /butter
Method
1) Heat a saucepan, add oil and let it become hot. Add the all purpose flour and sauté for 3-4 minutes or until the flour changes color slightly
2) Take the pan off the heat and gradually add 2 tbsp water stirring constantly to form a paste. Avoid lumping of the solution. Now gradually add the milk and form a smooth mixture.
3) Return the pan back on the stove and let it thicken. Add salt and herbs
4) In a baking dish, pour the cooked pasta and top it with the white sauce.
5) Spread grated cheddar cheese and parmesan on the top and sprinkle with black pepper.
6) Bake for 15 minutes in preheated oven at 180 degrees. Watch the top , if it has changed color significantly then remove from oven.
Enjoy
