Cheese burst pizza

Once I got my pizza dough sorted, there was no looking back. I wanted to re-create the Chicago style deep pan pizza for a long time now. Add to it the latest entrants in the market, cheese burst, cheese poppers, cheese endings all of it to inspire.
This is a simple recipe to make.

To yield 4 regular deep pan pizza,
1 recipe pizza dough (with yeast)
1 cup grated mozzarella cheese
1 cup grated cheddar cheese
2 cups pizza sauce topping
2 cups chopped vegetables (capsicum, onion, tomatoes, olives, mushrooms, baby corn etc.)
Seasonings – Salt, pepper, chilly flakes, oregano salt
1) Preheat the oven at 200c. Make 8 balls of same size using the pizza dough. Roll out the balls to form flat base. Make 4 bases slightly bigger than the others.

2) On a baking sheet, brush some oil (skip if using non stick). Place a large pizza base and spread the grated cheese, both mozzarella and cheddar. Place the smaller pizza based on top. Roll over the corners of the outer pizza base to form a stuffed crust ring.

3) Brush some oil on the pizza based which is now stuffed with cheese. Add the pizza sauce and vegetables and season as per choice. Add more cheese if you like. I did
4) Pop it in the oven for 10 min. 

Serve, if you get a chance, as mine was over in the pan as soon as it popped out of the oven.
